Where there was once just one Indian restaurant within a ten-mile radius, he noted, there are now between forty and fifty, a change that mirrors the scale of Desi immigration reshaping the region. The term Desi is widely used by people of the South Asian diaspora to describe themselves. Indian immigrants are increasingly settling not only in traditional strongholds like California and New York but also reshaping states such as Texas and Georgia, transforming suburban spaces into some of the most diverse areas in American life. Indian Americans have become the second largest immigrant population in the United States. Udayarajan came to America for work in 2007, having not initially planned to stay permanently.
