Assam's most comforting side — boiled potatoes mashed with raw mustard oil, sharp onion and green chili. Its genius is in what it does NOT have: no butter, no cream, no cooking beyond boiling the potato. The raw mustard oil brings a distinctive pungency that makes Aloo Pitika unmistakably Assamese. Serve alongside rice and a bowl of sour dal or masor tenga.

Ingredients
- ▪potatoes3 medium
- ▪mustard oil (Sariyoh tel)2 tbsp

- ▪green chilies, finely sliced2
- ▪saltto taste
- ▪fresh coriander (Dhonia paat), chopped2 tbsp
- ▪roasted sesame seeds (Til)1 tbsp
🌍 Cooking abroad? Substitutions
- Mustard oil is available at most South Asian and East Asian grocery stores abroad. Look for the green-capped bottles labelled kachi ghani (cold-pressed). It must be used RAW here — heating it changes its character entirely.
- If mustard oil is genuinely unavailable, extra-virgin rapeseed (canola) oil is the structurally closest substitute; add a drop of sesame oil for some pungency.
- Sesame seeds can be dry-toasted in a pan for 2 minutes if you start with raw seeds — they add a nutty finish that complements the mustard oil.
Method
- 1Boil potatoes in well-salted water until a fork slides in without resistance, about 20-25 minutes. Drain.
- 2While still warm, peel and place in a mixing bowl. Mash coarsely with a fork — leave some texture, do NOT make it smooth.
- 3Add the raw (unheated) mustard oil directly to the warm potato. Mix well.
- 4Add chopped onion, green chili, and salt. Mix with your hands or a fork until combined.
- 5Fold in fresh coriander and roasted sesame seeds.
- 6Taste and adjust salt. Serve at room temperature alongside rice.
