Bebinca is Goa's most celebrated layered dessert, built one slow-cooked stratum at a time using coconut milk, eggs, and a haze of nutmeg. Each layer caramelises against the last to create a jewelled stack that cuts like a terrine and tastes like coastal India at its most festive. Goans call it the Queen of Desserts, and at any wedding or Christmas table, the bebinca is the centrepiece.

Ingredients
- ▪eggs8 large

- ▪thick coconut milk — नारियल का दूध2½ cups
- ▪refined flour (maida) — मैदा1 cup
- ▪nutmeg, freshly grated — जायफल¼ tsp
- ▪cardamom powder — इलायची पाउडर¼ tsp
- ▪ghee (clarified butter) — घी5–6 tbsp, for brushing between layers

🌍 Cooking abroad? Substitutions
- Thick coconut milk: Outside Goa, use canned full-fat coconut milk (403 ml) without shaking so you scoop the thick cream at the top. Avoid 'lite' versions — the richness is essential.
- Ghee: Use unsalted butter if ghee is unavailable, though ghee gives a slightly nuttier caramel edge between layers.
- Maida (refined flour): Plain all-purpose flour is a direct substitute. Do not use self-raising flour — it changes the layer texture.
Method
- 1Whisk eggs and sugar together in a large bowl until the mixture turns pale and the sugar has fully dissolved, about 3 minutes.
- 2Pour in the thick coconut milk and mix well. Sift in the maida, then add the nutmeg and cardamom. Whisk until a smooth, lump-free batter forms.
- 3Divide the batter into two equal portions. Stir a pinch of turmeric into one portion for a golden hue on alternate layers (optional but traditional).
- 4Heat a heavy cast-iron or thick aluminium pan (22–24 cm) over medium-low flame. Brush the base and sides generously with ghee.
- 5Pour about ⅓ cup of batter into the pan, tilt to coat the base, and cook uncovered until the layer is set and the underside is golden-brown, 4–5 minutes.
- 6Brush the set layer with ghee, then pour another ⅓ cup of batter on top. Continue cooking and adding layers, alternating plain and turmeric batches if using, until all the batter is used (typically 7–10 layers).
- 7Once the final layer is cooked and the top surface is set, remove from heat and allow to cool completely in the pan, at least 1 hour.
- 8Invert onto a serving plate so the caramelised bottom layer faces up. Slice into wedges or squares and serve at room temperature.
