Chicken Cafreal is one of Goa's most striking dishes — a fiercely green marinade of chillies, coriander, garlic, and spices rubbed into chicken that is then pan-fried until charred at the edges. The recipe arrived in Goa through Portuguese traders who encountered a similar preparation in Mozambique, and Goan cooks transformed it over generations with local chillies and toddy vinegar. Served with lime wedges and a cold beer or two, it is the dish visitors keep thinking about long after they leave the beach shacks of North Goa.

  • Toddy vinegar (fermented from coconut sap) is specific to Goa — substitute with apple cider vinegar, or use white wine vinegar with a pinch of sugar stirred in to approximate its mild sweetness.
  • Bird's eye chillies from South-East Asian grocery stores are the closest substitute for small Goan green chillies found in diaspora cities. Use 4–5 for similar heat.
  • Outside India, the char flavour of cafreal can also be achieved on a barbecue grill: marinate overnight, grill on medium-high for 20–25 minutes, turning once.

Method

  1. 1Combine all marinade ingredients — green chillies, coriander, garlic, ginger, peppercorns, cumin, cloves, cinnamon, turmeric, vinegar, lime juice, and salt — in a blender. Add 2 tablespoons of water and grind to a thick, vivid-green paste. Taste: it should be bold, sour, and fiery.
  2. 2Make deep cuts down to the bone on both sides of each chicken piece. This is not optional — the marinade must reach inside the meat, not just coat the surface.
  3. 3Rub the green paste into every surface and deep into the cuts. Cover and refrigerate for at least 4 hours, preferably overnight. The longer it sits, the more the chillies and vinegar work their way through.
  4. 4Bring the chicken to room temperature 30 minutes before cooking. Heat oil in a wide, heavy pan — cast iron is ideal — over medium-high heat.
  5. 5Lay the chicken pieces skin-side down without crowding. Do not move them for 4–5 minutes so a proper crust develops. Flip and fry the other side for another 4 minutes.
  6. 6Reduce heat to medium-low, cover the pan, and cook for 18–22 minutes until cooked through. Uncover in the last 3 minutes to let any remaining marinade in the pan caramelise.
  7. 7Serve immediately with lime wedges and sliced onion rings. The charred green crust is the whole point — do not let it steam off under a lid at the table.
