Bhel puri is the quintessential Mumbai street food — a chaotic, crunchy, tangy, sweet, spicy explosion in every handful. Puffed rice, sev, and chutneys come together in minutes to create something greater than its parts. It is served by chaat vendors all along Marine Drive and Juhu Beach, and the best ones have a signature balance of sweet tamarind and fiery green chutney that no recipe fully captures — but this one comes close.

  • Puffed rice is widely available in Indian grocery stores abroad as murmura or muri; in a pinch, plain puffed rice cereal (no added flavors) works.
  • Papdi can be replaced with plain salted crackers or even broken papadums for texture.
  • Bottled tamarind paste thinned with water, sugar, and a pinch of cumin makes a quick substitute for tamarind chutney when the real thing isn't available.

Method

  1. 1Prepare both chutneys in advance (or use store-bought). The tamarind chutney should be thick and pourable; the green chutney should be fresh and herby.
  2. 2In a large mixing bowl, combine puffed rice, sev, and crushed papdi.
  3. 3Add diced potato, onion, tomato, and green chili. Toss gently.
  4. 4Drizzle tamarind chutney and green chutney over the mixture. Add chaat masala and lime juice.
  5. 5Toss everything together quickly — bhel puri goes soggy fast, so do this at the last moment.
  6. 6Taste and adjust: more tamarind for sweetness, more green chutney for heat, more lime for tang.
  7. 7Divide into serving bowls or paper cones. Top with extra sev and fresh coriander. Serve immediately.
