Kachori Sabzi is the quintessential morning meal of Uttar Pradesh — the kind of breakfast served from roadside dhabas in Varanasi and Lucknow before the city fully wakes. The kachoris are made with a spiced urad dal filling sealed inside a flaky, khasta (shatteringly crisp) shell, and the sabzi is a bold, tart potato curry that soaks into every broken piece. No dairy, no eggs — this is a powerfully satisfying vegan breakfast.

Method

  1. 1Make the dough: rub the oil or ghee into the flour and salt with your fingertips until the mixture resembles coarse breadcrumbs — this fat coating is what creates the flaky khasta texture. Add cold water a tablespoon at a time to bring the dough together into a firm, smooth ball. Do not over-knead. Cover with a damp cloth and rest for 20 minutes.
  2. 2Drain the soaked urad dal and grind it coarsely in a mixer — you want a rough, grainy paste, not a smooth puree. Heat 1 tbsp oil in a pan, add asafoetida and cumin seeds. When the cumin splutters, add fennel seeds, green chilli, and the coarse dal paste. Add coriander powder, red chilli powder, amchur, and salt. Cook on medium heat, stirring constantly, for 7–8 minutes until the filling is completely dry and fragrant. Spread on a plate and cool completely.
  3. 3Divide the rested dough into 12–14 equal balls. Flatten a ball in your palm, place a generous teaspoon of filling in the centre, gather the dough edges up and pinch firmly to seal. Gently flatten the stuffed ball into a round disc about 6–7 cm across — be careful not to press so hard that the filling breaks through.
  4. 4Heat oil for deep frying to 150°C / 300°F — this lower temperature is essential for khasta kachori. If the oil is too hot, the outside colours before the inside cooks through and the pastry will not be crisp all the way. Slide in 3–4 kachoris at a time and fry for 9–11 minutes, turning occasionally, until they are pale golden and fully crisp. They will crisp further as they cool.
  5. 5For the sabzi: heat 2 tbsp oil in a kadai over medium heat. Add cumin seeds and asafoetida. When the cumin splutters, add the chopped tomatoes and grated ginger. Cook for 5–6 minutes until the tomatoes break down completely. Add turmeric, red chilli powder, and coriander powder; stir for 1 minute. Add the roughly crushed boiled potatoes and 1.5 cups water. Stir well and simmer for 8–10 minutes until the sabzi is thick and the colour is a deep reddish-orange. Finish with amchur and fresh coriander.
  6. 6Serve the kachoris hot alongside a generous bowl of the sabzi. The kachoris should be cracked open at the table so the warm sabzi soaks into the crispy layers.
