Aloo ke Gutke is the proudest potato dish of Uttarakhand — small, whole boiled potatoes fried with jakhiya seeds (the region's signature wild mustard spice) until they develop golden, blistered skin and a smoky bite. Sold by vendors at every hill-town crossroads and cooked at every Pahadi home, Gutke is the snack that says you are somewhere on a mountain road in Kumaon or Garhwal.

Ingredients

- Jakhiya (also spelled jakhia or jakia) is the soul of this recipe. Look for it at stores specialising in Pahadi or Uttarakhand food, or order online. As a substitute, use a mix of ½ tsp mustard seeds + ½ tsp cumin + a tiny pinch of fenugreek seeds, which together approximate jakhiya's earthy, slightly bitter pop — the dish remains delicious, if different.
- Mustard oil is central to the Pahadi flavour; its natural pungency mellows beautifully when heated. It is widely available at Indian grocery stores in the UK, USA, Canada, and Australia. Rapeseed (canola) oil is the closest neutral stand-in if needed.
- Baby potatoes give the best texture because the skin-to-flesh ratio means more crispy surface per bite. If unavailable, use waxy potatoes (Charlotte, Desiree, Yukon Gold) cut into rustic chunks rather than floury potatoes, which can fall apart.
Method
- 1Boil the potatoes in generously salted water until just cooked through but still firm — about 12-15 minutes. Drain, cool slightly, peel, and halve or cut into 2-inch chunks.
- 2Heat mustard oil in a thick-bottomed kadai or cast-iron pan over high heat until it just begins to smoke; reduce to medium.
- 3Add jakhiya seeds, cumin seeds, and dried red chili; let them splutter 30-40 seconds — jakhiya seeds should sizzle and release a sharp, peppery fragrance.
- 4Add minced garlic and fry, stirring, for 60 seconds until golden.
- 5Add the boiled potatoes in a single layer as much as possible; resist the urge to stir for 2 minutes so the base crisps up.
- 6Sprinkle over the turmeric, red chili powder, coriander powder, and salt; toss the potatoes to coat evenly.
- 7Continue to cook on medium-high heat, stirring and pressing the potatoes lightly every 2 minutes, for 8-10 minutes total until they develop golden, blistered patches on the outside.
- 8Add slit green chili; toss and cook 2 more minutes. Squeeze lemon juice over, garnish with fresh coriander, and serve hot with roti or as a snack.
