Rava dosa is the weekday shortcut that Tamil households reach for when time is short but appetites are large. Unlike the fermented rice-and-dal batter of regular dosa, this one comes together in minutes — fine semolina, rice flour, and all-purpose flour whisked into an almost translucent, heavily watered batter. The secret to its trademark lacy holes is pouring the batter from a good height and letting the pan do the rest, producing a brittle, golden crepe that shatters at the first bite.

Ingredients
- ▪fine semolina (rava / sooji)½ cup
- ▪rice flour½ cup
- ▪all-purpose flour (maida)2 tbsp
- ▪water2½–3 cups (batter should be very thin)
- ▪green chiles, finely chopped2
- ▪fresh ginger, finely grated1 tsp
- ▪cumin seeds (jeeragam)1 tsp
- ▪whole black peppercorns, coarsely crushed½ tsp
- ▪fresh curry leaves, torn1 sprig (about 10 leaves)
- ▪red onion, finely chopped1 small
- ▪fresh coriander (cilantro), chopped2 tbsp
- ▪salt¾ tsp, or to taste
- ▪oil or ghee for cooking2–3 tsp per dosa
- Fine sooji is key — if only coarse semolina is available, pulse it briefly in a dry grinder or spice mill before using. Coarse rava produces a thicker, less lacy texture.
- Fresh curry leaves are irreplaceable for authentic flavour; dried ones are a poor substitute. Many South Asian grocery stores stock fresh or frozen curry leaves — frozen work almost as well.
- If a cast-iron tawa is unavailable, a heavy stainless-steel pan works better than a thin non-stick for achieving the necessary high heat and the characteristic crisp, lacy edges.
Method
- 1Combine the semolina, rice flour, all-purpose flour, and salt in a wide bowl. Add water gradually, whisking to eliminate lumps, until you have a very thin, pourable batter — thinner than buttermilk. Stir in the green chiles, ginger, cumin seeds, crushed pepper, curry leaves, onion, and coriander. Rest for 10 minutes so the semolina swells slightly.
- 2Check the consistency after resting: the batter should run off a ladle in a quick, steady stream, not coat it. Add more water if needed; the batter thins as the semolina hydrates, so err on the side of loose.
- 3Heat a cast-iron tawa or heavy non-stick pan over medium-high heat until very hot — a drop of water should evaporate on contact. Grease lightly with a few drops of oil wiped across the surface.
- 4Hold the ladle about 12–15 cm (5 inches) above the pan and pour the batter in a thin, circular stream starting from the outside and spiraling inward. Do not spread with the back of the ladle; the holes are the point. Fill any obvious gaps with a small drizzle of batter.
- 5Drizzle ½–1 tsp oil around the edges and over the surface. Cook on medium-high heat without covering for 2–3 minutes, until the edges turn golden and release from the pan and the surface looks dry and lacy.
- 6No need to flip — rava dosa is traditionally cooked on one side only. Fold and serve immediately with coconut chutney and sambar.
- 7Between dosas, stir the batter well each time as the semolina settles to the bottom. If the batter thickens, add a splash of water to restore consistency.
